I thought of that, too, but I also came up with some other ways, only some
of which cost money.

1: write or buy an app that logs traffic to port 25, either on the SMTP
server or on a machine that logs it and forwards it to the actual SMTP
server
2: use the Foreign Mail Server to send the mail via something that has the
feature
3: turn logging up to ludicrous for SMTP and parse yesterday's log every
morning at 1AM.
4: Combine 2 and 3 by setting up a second SIMS box for SMTP, use it as a
Foreign Mail Server with ridiculous logging and a logparser (it also could
be your backup MTA)
