For the upcoming 2.0 what tasks are still to be accomplished?

What about the restructued client? Is it in a state that allows a release?
I would suggest to start by splitting the client and the server releases as well. I mean: if we are ready to distribute the server, but not the client, we do that: release one and not the other.
This increases parallelization since there are no cross dependencies between the two sets.

Let me sum up. These would be our releases:

1.) Full source and everything

yeah, source distro

2.) Full Server binary release: libs/war

binary distro (aka war distro)

3.) Tomcat 4.x bundle including autentication

do we need this?

4.) Tomcat 5.x bundle including autentication

potentially, even if I think we could get along without this for now and see how the users react.

5.) Client

yep, client has nothing to do with server and should have its own distro and release cycles, IMO.

How would a client release look like? Who would take care of creating one (as I have no idea about it)?

the client is mostly a library. README, javadocs, license, jar and source would do it for me... if somebody wants more, we'll welcome patches ;-)

Concerning the Tomcat bundles. We should add docs and some info it those as well, shouldn't we?

another reason to drop it. :-) [yeah, I'm a lazy ass]
