ok, it finally worked, I think for some reason this kickstarted a different process. Just in case anyone wants to know and while I remember 0) tell it in the Devices pref not to back-up/sync automatically [nearly forgot this!] 1) check that new iPhone has latest OS before doing anything else. 2) back-up old one. 3) plug in new one 4) use the right-click method above NOT the buttons about 'restore' (restoring triggers reinstall of OS and then asks if you want to restore from back-up.
