My advice would be don't do it through iTunes unless you've already upgraded to 
Mac OS X Lion 10.7.5 or Mountain Lion 10.8.2 AND iTunes 10.7.

The best way to do it on an iOS device is to go to Settings - General - 
Software Update and let it do it whilst connected to your wireless network. 
i've successfully updated an iPad 2, a new iPad, an iPhone 3Gs and an iPhone 4.

You'll still have to update to 10.7.5 or 10.8.2 and iTunes 10.7.
