No don't use a wet drop.  Use a dry sprinkler.  Had to do this several years 
ago.  The mfgr told us they could provide the 650deg head on the dry barrel but 
it wouldn't be UL listed.  Need to check if that's an issue or not with AHJ.

The Local AHJ is requiring sprinklers in some Industrial Walk In ovens - 
the largest of which is 12' x 20' - BUT the highest expected temperature 
is 500 degree in the space and the highest temp sprinklers I am aware of 
are 500 degrees.
