When I was a young firefighter we had a felt mill with an oven in town.  They 
had a fire in the oven about every couple months.  No sprinklers.   For the 
life of firefighters and being able to keep the jobs in town is IMHO a very 
good reason to sprinkler many ovens (if not all).  I do agree there might be 
occasions where something in lieu of sprinklers might be safer to all.

Why in God's name does he want (or anyone) want sprinklers in an oven,
no matter how big? I once had to put sprinklers in a building over a
molten salt bath (1000 degrees F). The manufacturer's literature said
not too (for obvious explosive reasons) so to separate the potential
deaths from the life safety equipment we built a $22,000 hood over the
salt bath leaving about a three foot perimeter between the hood and
the building walls. The salt bath was the only thing in the building.
