Per Code certain oven classifications require internal fire suppression. Depending on the construction of the oven, there are cases were gaseous extinguishing would not be effective or may react with the internal process. 60 deg. water may cause less damage than CO2 for example. There are a host of reasons and issues but fact of the matter is, water suppression within ovens is not an uncommon thing in industrial applications. The cost of some of these items and the turnaround time to remove and replace one if completely destroyed warrants suppression. High-speed deluge is an option when closed head wet systems just won't react fast enough.

The manufacturer's literature said not too (for obvious explosive reasons) so to separate the potential deaths from the life safety equipment we built a $22,000 hood over the salt bath leaving about a three foot perimeter between the hood and the building walls.
