Keep in mind that NFPA Standards are not the only driving documents. The Building, Fire, Mechanical, Plumbing Codes provide the directives of what is required. The NFPA Standards then give the direction on how to apply the requirement to the specific conditions.
For installations which are built in accordance with the International Code Council (ICC) set of codes, the type of duct system required is driven by the International Mechanical Code (IMC). The International Mechanical Code, Chapter 5, Section 506 provides direction on the type of material for grease ducts serving Type I commercial kitchen hoods. But, if you are not required to follow the International Code Council codes, you need to find out what is the applicable and enforced local code and start there for direction. Craig L.
