To follow what Todd said, FM 3-26 should get you started as it outlines the occupancy, description of occupancy, and exceptions for each Hazard Category. HC-1 is .1/1500, HC-2 is .2/2500, HC-3 is .3/2500, for Wet systems with Ceilings up to 30ft.
Although both are listed as HC-1, I would be wary of doing the kitchen as HC-1 if you are contracted to provide a NFPA 13 system AND FM approved system. NFPA 13 has Restaurant Service Areas listed as OH1 (.15/1500). This is one of those cases where NFPA 13 and FM don't quite agree with each other. When we have run across this, to comply with both, we design the systems for the worst cases .1/1500 for seating, .15/1500 for kitchen, 250 hose, no reduction to area. Sometimes, when faced with "box checkers", we have provided two separate cover sheets based on which design requirements that "box checker" is using. Even though the system has been designed for worst case. I have contacted the GC asking for the FM contact but thought maybe the forum could provide some insight. 1)Does FM allow reduced design areas? 2)Seating area 01./1500 +100gpm and kitchen 0.15/1500 +250gpm sound right? Thanks, Dewayne
