The touch has RCA outputs. "Inputs" was what was being questioned. Your quote: -"You can use a 1/8" jack to RCA audio cable to get from the RPi to the Touch's RCA inputs." - I think what the OP wants is to use ethernet/wifi to go from the pi (running LMS) to the touch, then the touch digital or RCA outputs to his kit.
