Ok, I found the setting. It does not do anything if Replay Gain is off as far as I can tell. I never use Replay Gain anyway, so no big deal there.
Anyway, I agree on many of your points. Still, it would be interesting (just for curiosity's sake) to do a diff of a recording that is available on all Services (I found one and my parents actually own it on CD, so I could do my own FLAC rip), but sadly I just don't own the right software and don't really have the time right now to dig into it properly. What I can say however is, that the way to go for actually capturing the audio is, using a Raspberry Pi with Hifiberry Digi and piping the sound in through the Optical in on a good PC Soundcard.
