Hi Cullen,
I do not know where you live or how far you'd be willing
to move. Anyhow, from what you describe as your
interests it should be well worth looking into an
apprenticeship at one of the gothic cathedrals or
munsters or domes. I know of some which do have a
mason's hut doing the restauration and have spoken to
some apprentices. You'll learn everything concerning
carving techniques and structural use, sometimes even
gothic design 'secrets'. These are, however, usualy
limited concerning materials insofar as they mainly deal
in the stone the cathedral is built of.
In Germany the 'Frauenkirche' in Dresden is one of the
busiest sites at the moment and probably one of the most
interesting. But Cologne, Basel, Freiburg, Constance are
well wort visiting as well. Thannes in France (near
Freiburg, I believe) is extremely interesting as is
Strassbourg.
