My thoughts on wiring:

There are NEC restrictions about running low voltage wiring i.e. telephone,
data, coax in the same conduit with AC power wiring. LV wiring should be
kept 6" away from AC in parallel runs, open or in plastic conduit, to avoid
cross talk. Crossing runs can be closer.

A central junction room from which all distributions are made is a good
idea, as you only hook up what you want active at the time. Add pull boxes
as needed but don't cut and splice the wires at each box, end terminations
only.
