Others may have experiences that disprove my hypothesis, but I think it is more a problem of using the VGA port. That's when this problem occurs for me. I find that running a VGA monitor through a Mac to VGA adapter and hooking it up to the Mac display (DB15) port takes care of the problem. It's possible that the ROMs would also have some effect. I haven't tested for that. It should be fairly easy for you to test, especially because you already have the needed chips. Be sure to install the EPROM in the correct orientation. Use that notch at one end of the chip to orient it properly. It should match the silk-screened notch on the board (and the orientation of the chip that you remove).
