And that indeed was the secret. The previous owner of the printer had
disabled all but a single protocol.

For the sake of posterity, the factory default settings along with all the
supported protocols can be restored by switching the printer on with the
"Go" button pressed. One gets a cold boot. Then all the un-needed protocols
can be removed using the menus, after switching Config Network to Yes.

I was thrown because Localtalk was shown as active, whereas the protocol I
needed was Ethertalk!

Once I'done this the printer appeared in the Chooser, and it set itself up
from there.
