Alan,
>From my own experience, there aren't any significant
problems with running only ATA drives UNLESS you will
be doing audio/video recording/editing that has to go
through the PCI bus of the 7500.  The ATA cards take
up    a large amount of PCI bandwidth and this can
negatively affect the ability of audio/video capture
cards to function properly.  

Certain ATA cards also had problems with audio
playback on older Macs and you should contact the
manufacturer of your ATA card and directly ask them if
there are any audio or video playback issues
associated with using their card on a legacy machine.

I don't have any problems with my Sonnet Tempo in my
S900, but I don't capture audio/video on it either.
