That is the theoretical maximum, but because of various overhead and inefficiencies the maximum anyone ever manages to see seems to be around 70 - 80 MB/s. This may still be so high as not to account for slow burn times.
Keep in mind that most of the hard drives that shipped with the S900s were only capable of about 8 - 12 MB/s no matter how fast a SCSI bus they were connected to. That's how fast hard drives of that era were.
Modern hard drives seem to do 30 - 40 MB/s but you can certainly still buy ones that are down around 20 MB/s, and "new" drives that are old models may be slower still. And going through a Firewire to IDE interface may slow that top performance as well.
E.g. until a couple of years ago the Seagate Barracuda ST32550 and ST15150 (2 & 4 GB respectively) still turned up new quite often. Those drives only deliver 6 MB/s and 4-5 MB/s respectively. They came out in the early to mid 90s and that's how fast drive platters were back then.
