No, Sync transfers only the changes you make, and you can select what should be synced per profile and device (e.g. just sync bookmarks from one device, and everything from another).

On top of that, Sync encrypts all data *before* it leaves your client. So no-one except you can read it (or technically speaking, only those who have the Sync account password and Sync Key), not even Mozilla. That's why I see no point in setting up a custom server, but if you're really paranoid, you *can*.

That said, Sync is not able to sync address books (yet). Syncing mail is pointless, because IMAP is better suited for that. For news and feeds there was MailNews Sync, which probably could be made work with newer Sync versions again; it just needs some love.
