Put all profiles far away from all other parts of all Mozilla products. You can put them anywhere that Win has access to. They are data, not apps.
To get 2.3 to use the data from your 2.0 profile, copy the 2.0 profile tree and name it something you will recognize as 2.3 eg X:\Profiles\MySM23Profile. The first time you run 2.3 tell it to use the profile you just created and it will use it and update it to 2.3 level.
To always have your choice of profiles, have the app shortcut call something like "X:\SM23\Seamonkey.exe -Profilemanager". The first time you run, create a profile where you made the copy of the 2.0 profile. That profile will then appear on a profile menu.
Mozilla products change often. New test versions are posted several times a day. If you are waiting for it to stabilize you will have a long wait. And there will be bugs. Run as many versions as you want in parallel and use the one your prefer.
