You can't without making it hard on people other than data entry folk. You can change the data entry screen to have that field be not modifiable, and perhaps autofill of your preferred value for that field. Then to change it, other folks will have to undo the changes, make their change and put it back. Alternately, you can duplicate the data entry screen and make the changes only on the duplicate. Then tell the data entry folk that that is the only screen they are allowed to use on penalty of having to stand in the corner and recite nursery rhymes for the rest of the day.
