This will work fine as your describe it. What you're talking about is called CSD, circuit switched data. This is the old way of getting online before GPRS or EDGE and has a lightening fast speed of 9.6kbps.
If your intention is to check email and such from your pda using your phone as a modem might I suggest you spend an extra $5.99 and get T-MobileWeb. At a minimum you'll see speeds around 30-40k on GPRS and as high as 170-190k on average if your phone is EDGE capable. CSD will use your anytime minutes while T-MobileWeb is unlimited data and time. For both you'll need some basic setup to get them working but both will working fine from a PDA such as your Clie.
