Most (although not all) of the medieval silk TW I've read about has been
woven with 2-ply reeled silk warp; sometimes weft was plain reeled silk or
other materials. Two ply yarn, in *any* material, seems much more suited
to tablet weaving than single ply yarn, as Peter notes in his materials
chapter. Presumably one would ply silk the same way as other materials:
twist each ply in one direction and then twist both plies together in the
other direction.
All the catalogue entries for medieval knitting that I could put my hands
on just now (six) used S-twisted reeled silk. Reeled silks of the S-, Z-,
and/or untwisted ("I" twist) variety were typically used for weaving cloth.
