Yes, you do. And then you give MailRoam a list of SMTP servers that
you might use, and it detects automatically which one is appropriate
(if I remember correctly). Like I said, it worked fairly smoothly.

I don't use MailRoam any longer. On the same wireless connection, I
might use several different SMTP servers.

But one other possible solution for you might be to install your own
local SMTP server - something like "Advanced SMTP Server" also seems
to work quite well for many people - especially those who do mass
mailing.

I guess my point is that I just don't know how useful or popular a
global SMTP server setting would be. But, hey, at this stage I don't
care how many extra options Ritlabs wants to add to TB as long as
basic functionality is not compromised in the process (as is the case
now for me with the CC opening in the background).
