The 208v circuits I've used are 3-phase and you can use them with normal PSUs (like the stock ones in your Supermicro servers). The PDU takes 3-phase 208v input and outputs 208v that the servers can use (single phase?). I think that's the case for all 3-phase PDUs with C13 outputs, at least it is for ServerTech units I've used.

careful there. That it's IEC has absolutely no bearing on whether it's 208V or 120V.

IEC style receptacles have amperage ratings, but not voltage. NEMA plugs have slightly more variation in this area.
(208V and 220V are different than 110V)
