I agree that IMAP is generally the way to go.  (Note: I work for
Google but a different part of google, so my advice is only an
estimate).

One point of concern:  Can you Exchange server handle the very large
mail boxes that people may have accumulated on the Google Apps
accounts?   If you run out of space on Exchange it could make for some
unhappy users (and sysadmins).  You might want to migrate only
designated folders, or not migrate any data, just have new email go to
their Exchange inbox and let them retain their Google Apps account for
a year.

PLEASE convert a few people at a time, don't try to do a "flash cut"
or "weekend migration".  At the last LISA someone published a paper
about how bad a transition like that can go, especially since there is
no good way to test such a migration before hand.  (and similar
statements have been published over and over.  When will we ever
learn?)
