It's always a good idea to know you're requirements, but in this case the disk on the Exchange server is not an issue. For a migration like this, you need to do everything wholesale. Move all messages to the new solution and cut ties to the previous one. It would create more headaches and user confusion later on if some mail is left at gmail and other mail is on exchange.
