Matthew...is that L2 MTU or L3. On all our Mikrotik routers it shows that the 
Ethernet MTU is 1500 but L2 MTU is 1580 with a max capability much higher.

Just don't want to Monkey around with things unessisarily.

Here is Nick's replay to me about MTU settings:

We need 1518+28 (GTP) + 28(GRE) =1574 in your S1 path.  The UE can be 
configured for 1560 and endpoints (PCs) set at default 1500.  Also eNodeB and 
EPC must be most recent (4013/729) and UE at .105 (configured for 1600 MTU)
