I usually do use gv for pdf -- but some documents are encrypted (there seems to be a way around that but I never figured it out from lack of real interest) or simply contain some stuff which confuses ghostscript. This usually does not happen with postscript, but there *are* postscript files which are usually not created by dvips (or *nix applications in general...) which make big problems too. Just put a line of code in the postscript which switches to doublesided and "tumbles" the pages so the long side is the turning edge. gs will choke on it, the printer will do fine. But at least its possible to hand edit postscript.....
