Take a look at Gilovich's "How We Know What Isn't So: The Fallability of Human Reason in Everyday Life." It is an interesting read, and he does a good job discussing the basics of human reasoning within the context of questionable beliefs (e.g., the hot hand in basketball, ESP, questionable alternative health practices, alien abductions). I'm using it as one of several books in a freshman-level honors seminar on (very broadly) critical thinking, paranormal phenomena, and questionable beliefs. It seems to be an excellent addition to that course, and I think there may be quite a bit of overlap with the course you're proposing.
