Perhaps this is more in the area of sensation and perception, but I thought Diane Ackerman's _Natural History of the Senses_ was a great read and had a lot of good information. And although I vehemently disagree with parts of it, I'd also recommend _The Language Instinct_ by Pinker; I used it as one of the texts for a psycholinguistics class I taught a few years back.
(Aside: Has anyone managed to work in _The Botany of Desire_ into a course yet? Motivation and emotion-related, perhaps? Such a great book, so concise and compelling, surely someone can use it somewhere...)
