The touchscreen is not only a very small percentage of the overall cost, but it's also probably only a small percentage of the interface-of-choice for the Touch. Lots of us use the Controller, or iPeng, or web ui, or IR remote instead of the touchscreen. Try it, you'll like it ;-)
