I'd get everything working before dealing with EDO.  Your option B
assumes using the built in LMS running on the TOUCH itself. That's
probably not a good idea as it has some bugs and generally is not
reliable for most people. It is particularly not needed now when there
are so many inexpensive, headless micro computers that can run LMS
(Pi,wandboard, etc.).  And jitter is a bogeyman in modern equipment and
nothing to worry about. Search this forum for more discussion on that
issue.

My suggestion:

1. setup LMS on something (PC, Mac, microcomputer (Pi, etc.).  Connnect
this to your router with ethernet. Music files will be connected to this
server. (just to get started, go ahead and just install LMS on your
PC/Mac just to see how it all works).
2. Touch can be connected to your network via WIFI or ethernet. No
difference in sound quality. If WIFI connection is not good, you'll know
it (with dropouts, etc.)
3. Connect TOUCH to DAC with Coax (S/PDIF).
4. I suggest  a smart phone/pad app for controlling it alll. I use iPeng
on iPhone.

5. Once all is working, if you want to be able to play > 24/96 files,
you can install EDO.  Even if you are NOT using USB out on the TOUCH,
the EDO applet (which you install on the TOUCH itself) will allow 24/192
even on the S/PDIF coax out, assuming the DAC can play 24/192.
