I'm not sure how to do this. I assume, that the defaults for tickets in my instance are defined correctly in trac, so that there is no need to overwrite them in email2trac. Not sure, whether you really need it. Probably not, if you fetch the mail from IMAP and forward it directly to email2trac via getmail.
