An additional box in the installer is an additional complexity. Like I wrote  
above: in the rare contexts where a GRUB password makes sense, who installs  
the system should be skilled enough to know how to setup a GRUB password. She  
needs no check box.

To not do at least this is hostile to most Trisquel users and contrary to  
Trisquel's mission.

Well, "hostile" is a strong word. Let us say that, in this case, Trisquel  
makes it difficult to recover broken systems. For no good reason.
