At the moment, I think all you might miss by skipping Torchwood is some explanatory stuff for what crossovers there are with DW (I won't get any more specific out of your interest in avoiding spoilers). While there's occasionally some stuff on Torchwood about Captain Jack and the Doctor, I don't know that it's critical to fully appreciating the Doctor.
James Marsters has a guest run on Torchwood, which may change some minds given your son's interest in Buffy. I'm edging into presumption here, but Torchwood is a more adult show, with Captain Jack's sexual preferences a bit more front and center than in DW. We watched the first episode of Torchwood, but my son is less interested in that show, and wants to press on with Season 3 of Who (we are about 3 or 4 episodes in now).
