Captain Jack's bisexuality continues through Torchwood. That said, you usually see him act on it with men and hear of him acting on it with women. And yeah, that reads clunky, and probably misrepresents a few of his relationships, but I'm trying to avoid specifics.
The BBC documentary with Barrowman, The Making of Me, is a pretty good flick exploring genetic and other influences on sexuality. FWIW, Marsters has his normal hair color and voice in Torchwood. He still makes an impression. It was funny because he has been going to the Pride Parade and other such events for most of his life and doesn't seem to have much of the homophobia typical of his gender and stage in life, but the bisexuality part did not fit easily into any category he had.
