I wouldn't read that much into it. Vieira has a new talk show starting in the fall, which NBCU is producing, and she's in Sochi as a "special correspondent", hence the opening ceremony duties.
I suspect they went with Lauer initially because they knew he'd deliver, but they didn't want to keep using him or pull additional personnel from Today so as to avoid burning those anchors out and/or affecting the production scheudle on any pretaped segments for week 2. Mark - as Bob correctly points out, Seacrest has the live Idol shows starting this week, although I'd wager that NBC would have him in Sochi right now if not for his FOX commitments.
