@philosophique: Don't _hold_ Escape at boot -- _tap_ it _once_ (press-
and-release, just like normal typing) when the machine's boot logo
appears. If you still can't get the grub menu, then try booting the
-157 kernel again from the grub prompt, but leave off the "quiet splash
nomodeset" part. (You don't want the boot to be quiet; you want it to
be noisy.) If that does not succeed, try with the "ro" option (without
the quotes). If that does not succeed, finally try with "ro recovery
nomodeset" (without the quotes).

If that still does not work, try what William suggested: get a bootable
USB stick for Mint Victoria or Virginia, and use it to timeshift your
installation. (Or probably the USB stick also allows you to boot from
disk, chaining into the Grub menu on your harddrive. If so, select
Advanced options there, and choose the -157 kernel.)

Once you've booted into your own system, first install a 6.8 kernel.
Use the Update Manager and find in the menus where it says something
about kernels. Use that to install the latest kernel from the 6.8
series -- it's not affected by this issue (at least not on my machine).
Then reboot and do a normal system update.
