That is not a package produced or built by Ubuntu. Check the output of
"apt-cache policy dovecot-core". It does not come from the Ubuntu
archive.

Yes. It's your postfix configuration that is not pointing at the correct
place for the dovecot sockets, because from postfix's point of view, its
root directory is /var/spool/postfix, so the path you provide in the
postfix main.cf file must be relative to that, and not to /.
