Eric I am truly in awe of your skills. I have copied so many of your ideas, but of course I don't quite have your talent. How big is the sailboat, it looks to be about 30'. You are going to spend two years on it? When you had previously mentioned your trip I thought you were talking about another "big" sailboat approaching 70 feet or so. I have found that I love boats but I don't love big seas. There is plenty of intercoastal waterway, rivers, and protected waters around Florida that I can have a lifetime of cruising and exploring without being too much at risk. I do hope to go to the Dry Tortugas again though.
The plasteak is here: http://www.plasteak.com/osc/ It's been several years, but I called them, told them what I wanted to do, and they sold me the stuff. It comes in 12' lengths, which they cut into 8 and 4 foot pieces for shipping, since the longest I needed was 8' anyways. I think I paid almost 750 for the plasteak itself, but it was worth it. the swim platform has been one of the best improvements I have made to the boat, its like adding a screen porch to your home :) I plan to peruse your pics more thoroughly when I have some time to see what other ideas I can use. I have my own little experiment going with a dissected dorm fridge for a marine fridge. If it works well I will post info about it.
