Your main constraints are the processor and the RAM in the slug (NSLU2). The slow down in performance is likely because the processor and RAM are struggling to handle the growing slimserver database. I could be wrong, but I don't see any way the flash drive will provide relief. You need more processing horsepower and system RAM, and the flash drive doesn't provide either.
If performance becomes unbearably slow, you might need to start running slimserver on a computer (Windows or mac or linux), although you can continue to store the music on the slug.
