I ran my server on an ancient, way past very old PC under mandriva for 
years. Worked great. But I have fallen out of love with Mandriva.

Not sure exactly what you mean here.

Since you are facile with Mandriva, I'd try both using pure debian and 
Ubuntu Server.

The pure debian has all the gui stuff I need. "symaptic package manager" 
is equivalent to MCC's installer, does dependencies, etc.

Both Ubuntu and Debian use the same .deb files to feed the package 
manager. Actually, Synaptic is just a gui for 'apt-get' and 'apt-cache'
shell commands

Installing SqueezeCenter 7 is painless
