I'm glad to hear the sort tag resolved some of your issues. Personally, I prefer having an ARTISTSORT tag of "Collins, Albert" so that it sorts on last name, but the ARTIST tag of "Albert Collins" so it displays more naturally on my SB and the web ui. But that's just a matter of individual preference.
I am by no means an expert on codepages and locale, but I would think that "Your locale was detected..." message is coming from the shell. What do you get if you type 'locale' at the command prompt? One thing that puzzles me is that I've never had any locale/codepage problems with unicode characters in the tags, only when those characters are in the directory names or filenames. Do the accented characters come through garbled when you use metaflac --list?
