Whenever I install Debian, once I've installed the 'base' system and it
offers me some 'tasks' (I think that's what they call them) to set up, I
turn them all off so it doesn't install anything else. Also when it offers
for you to select packages to install, don't select any.

That way you have a completely bare bones system, and can just install the
stuff you need from there.

There is a .deb for the server, which presumably includes or correctly
depends on all the required dependencies, so it should be fairly trivial to
install from there.
