Greg/Steen, 1.21c looks like it has fixed the issue. The "Audio Output" dropdown now includes the I2S options. I changed the output to Hifiberry and saved the settings. On the "Main" tab, I noticed Squeezelite was not running. Restarting Squeezelite from the "Main" tab did not work, but a reboot sorted it out. I hope this is helpful to others too.
