Ditto on using Carbon Copy Cloner. Keep the SCSI in the machine and once you put in the new ATA card and Hard Drive you simply use CCC to move the OS over to the new hard drive. I did it just the other day and it went flawlessly.
You can keep 10 on the old scsi and set it up to be a "service utilities" drive or something like that. Another bootable volume is always a luxury to have when you need to run utility software that will not fix the booted volume while it's the startup disk. Don't poopoo that SCSI just yet.
