Hi, I was wondering if there is a way to set up constraints on the length of an edge in an SDS object?
There is no existing easy way.
My idea was to constrain the length of each edge to be no longer than x units.

1) Is this a viable theory that would help keep the mesh neatly structured?
Yes - the idea seems to refer to a cloth-like surface behavior.
2) Is there a way to implement this in RS v6 without a heap of coding?
A fair amount of coding is definitely needed. Anyway, I believe that Chrono and Dynatomic can do the job.
3) If not, is it something that could be interesting for inclusion in a future version? (Or as a plug-in with a heap of coding. ;-) )
The idea is certaily useful. Transforming a connected mesh of edges the way you suggested can be solved using standard numerical methods.
