Ah... did some experimenting:

1. Renamed ~/.openoffice.org to ~/x-openoffice.org-x and reloaded. I
then installed the PDF extension 3.2:
http://extensions.services.openoffice.org/project/pdfimport
  http://extensions.services.openoffice.org/node/1313
and that worked just fine.

2. I then renamed ~/.openoffice.org to ~/x2-openoffice.org-x and
reloaded. I then installed the PDF extension 3.1:
http://extensions.services.openoffice.org/project/pdfimport
  http://extensions.services.openoffice.org/node/972
and that worked just fine.

3. I then "updated" #2 above from 3.1 to 3.2 using the update option in
the extension manager... PDF now does not work.

4. I then reverted back to #1 and now it does work. So, there still
appears to be a bug in 3.1 to 3.2.
