It would be very helpful if you could tell us just where and how to make this setting in OOo3. I can’t find it.

From the help file, search "date";

"Date
Inserts the current date as a field. The default date format is used, and the date is not automatically updated.

"To access this command...
Choose Insert - Fields - Date

"If you would like to define a different date format, or have the date updated automatically, select Insert - Fields - Other to insert a field command and make the desired settings in the Fields dialog. The format of an existing date field can be modified at any time by choosing Edit - Fields."

I could not find how to change the default other than changing language preference.
Ah good, this works. Although it is a lot of clicking, especially if your style is not in the list in the first window. So now I know how to get a nice-looking date into a Writer document. (The system for Calc is much better.)
