You have two options.
For one-time file exchange with somebody on MS Office use File, Send As
Microsoft (Excel|Word|PowerPoint) or Files, Save As and set file type to
"MS Excel", "MS Word", MS PowerPoint". 
If you want to set it once and forget about it - go to to any of OO
apps, Tools\Options\Load/Save\General and in "Default File Format"
select "MS Office 97/2000/XP" for text doc, spreadesheet, presentation
and click OK.
